Pumpkin Cookies


These pumpkin cookies are great any time, but especially in the fall. Try taking some of these yummy cookies to your next party or pack some in your kids' lunches.

To make these cookies, you will need the following ingredients:

1-1/2 cup brown sugar
1-1/2 cup canned pumpkin
¾ cup oil
1-1/2 teaspoon vanilla
3 cups flour
1-1/2 teaspoon baking soda
1-1/2 teaspoon baking powder
¾ teaspoon cinnamon
¾ teaspoon nutmeg
¾ teaspoon ginger
1-1/2 cup raisins
¾ cup chopped walnuts

Instructions:

Preheat your oven to 350 degrees.

Beat together the sugar, pumpkin, oil and vanilla in a large bowl. Sift together the flour, baking soda, baking powder, cinnamon, nutmeg, and ginger and then add to the pumpkin mixture, stirring well. Blend in the raisins and walnuts. Spoon by tablespoons onto a well greased baking sheet. Bake for 12 to 15 minutes. Cool on cookie rack.

Peanut Butter Crispy Bars


These crispy peanut butter bars are so easy to make. You can serve them as is or
spread with melted chocolate or your favorite frosting.

Ingredients:

1/2 cup sugar

1/2 cup light corn syrup

2 T. margarine

3/4 cup peanut butter

4 cups crispy rice cereal

Optional: 1 cup (8 oz.) chocolate chips or favorite frosting

Directions:

Combine sugar, corn syrup, and margarine in a large microwave-safe bowl. Microwave
on high until the mixture begins to boil (about 1 to 2 minutes). Stir in peanut
butter. Stir in cereal until evenly coated.

While warm, spread the mixture into a greased 9 x 13 pan. If desired, melt a cup
of chocolate chips and spread over top of bars or spread with your favorite
frosting. When cooled, cut into bars and enjoy!
